In our culture, every new year’s eve, we eat soba. It’s called Toshikoshi Soba (“year-passing” buckwheat noodles). Soba symbolizes longevity, so we eat soba to wish for the long healthy life. Today, I made Kamo Seiro Soba (“Duck and Soba with Dipping Sauce”).
I pan-fried the duck breast (just the skin side) and then simmered both sides with the mixture of dashi broth, soy sauce, sake, and mirin for about 5 minutes. It was so nice with the soba.
