Sonwy Salmon (Tagine-style Donabe, "Fukkura-san")
This is especially a wonderful dish to cook after a busy day. You basically needs to just pile up the ingredients in the skillet of Fukkura-san, and the delicious nutritious dish is made in a very short time.
All you need to do is basically sear the salmon filets first, then, add the mushrooms, sauce mixture (vinegar, soy sauce, mirin, sake, ginger, etc.) and grated daikon on top. After closing the lid and waiting for just about 5 minutes...it's ready! I made three pieces of salmon for Jason and myselt, and we had to fight for the last piece, because it was so good! (We ended up splitting the last piece;-)
