Pomegranate Soy Yakitori (Santa Maria BBQ Grill)
We do BBQ dinner almost every Sunday during the summer. We love our Santa Maria BBQ Grill so much.
Jason is very good at fireling up the charcoal in the grill.
Since we grilled the pork just a night before, we did some yakitori (skewered grilled chicken) for this evening. Jason picked up a bottle of Pomegranate Molasses at a Middle-Eastern grocery store, so I decided to make a marinde with it. I would say my "secret" ingredient for this marinade is the soy sauce. By adding a little amount of the soy sauce, it develops the depth in the flavor and also simply the grilled aroma of the soy sauce is always so wonderful. Here's my recipe.
Pomegranate Soy Marinade (for 2 pounds of chicken)
1/2 cup pomegranate molasses
1 tablespoon soy sauce
1/4 cup red wine
1 tablespoon grated ginger
2-3 cloves garlic, grated
1/2 tablespoon cumin powder
1/2 tablespoon cayenne pepper
1 teaspoon salt
some black pepper
Hmmm...I think that was it. I simply whisked all the ingredients together and marinated the chicken thighs which were cut into skewerable sizes for overnight.
The aroma was so wonderful. The taste was so deep and great.
The chicken was served with the grilled summer vegetable salad, and donabe rice!
