Donabe & Japanese Cooking Class...Donabe smoking class tomorrow




Just finished shopping all the ingredients for tomorrow's cooking class.
I got the beautiful Scottish salmon (According to Karen of McCall's, it's produced by scottish sea farms a sustainable anti biotic and hormone free product!) and Muscovy duck breasts from McCall's Meat and Fish Company in Los Feliz. Thank GOD we now have McCall's in our neighborhood for the best quality meat and fish! Their selections are outstanding and make you want to buy everything. The owners, Karen and Nathan, have the great knowledge of both meat and fish, and they are always very kind.

It's very important for me to use the very high quality ingredients in my classes, so I drive everywhere for different ingredients. These salmon and duck breasts will be smoked in my donabe smokers tomorrow. Look how thick the salmon is. I'm so thrilled.
